1 (4 oz.) package of sweet baking chocolateChocolate Macaroon Cookies

2 egg whites

1/2 cup sugar

1/4 teaspoon vanilla extract

1 (7 oz.) can flaked coconut


Pre-heat oven to 350


To make great Chocolate Macaroon Cookies; Melt chocolate in a heavy saucepan over low heat,  stirring occasionally.  Remove from heat and cool on the side.

Beat egg whites at high speed of an electric mixer for 1 minute. Gradually add sugar 1 tablespoon at a time, beating until stiff peeks form and the sugar dissolves completely, (2-4 Minutes) .  Fold in melted chocolate and vanilla; then stir in coconut.

Drop Chocolate Macaroon Cookie mixture by teaspoonful onto a aluminum foil lined cookie sheet.  Bake at 350 for 12 – 15 minutes.  Transfer cookies, leaving them on foil, to wire racks to cool.  carefully remove chocolate macroon cookies from foil and transfer to plate.


Makes approximately 4 1/2 dozen finished Chocolate Macaroon Cookies cookies.Chocolate Macaroon Cookies
