INGREDIENTS for Oatmeal-Peanut Butter Chocolate Chip Cookie:
1/2 cup butter, softened (room temperature)
1 (18 oz. jar) chunky peanut butter
1 + 1/2 cup pure cane sugar
1 + 1/2 cups firmly packed lite brown sugar
4 large egg
1 teaspoon pure vanilla extract
6 cups quick-cooking oats, uncooked
2 + 1/2 teaspoons baking soda
1 (6 0z. package) semisweet chocolate morsels
Pre-heat oven to 350 F
Beat butter and peanut butter at medium speed of an electric mixer until fluffy: gradually add sugars, beating well. Add eggs and vanilla, mixing well.
Combine oats and baking soda in a large bowl with a wooden spoon for best results and so as not to brake up the oatmeal. Stir in the creamed mixture of sugars and butters, mixing well, then stir in the semisweet chocolate morsels.
Drop dough by tablespoonsful onto an ungreased nonstick cookie sheets. Bake at 350 F for 9 to 10 minutes. Cool on cookie sheets for 5 minutes; remove to racks to cool completely,
