Easy to Make, Fun to Eat; White Chocolate Chunk Cookie

INGREDIENTS – White Chocolate Chunk Cookie
1/2 cup butter, softened (room temperature)
1/2 cup shortening
3/4 cup pure cane sugar
1/2 cup firmly packed lite brown sugar ingredients
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pure vanilla extract
10 ounces white chocolate, coarsely chopped
1/2 cup coarsely chopped macadamia nuts – optional
Pre-heat Oven to 350F
Beat butter and shortening at medium speed or an electric mixer until creamy; gradually add sugars, beating well. Add egg, beat well.
Combine flour, soda and salt in vanilla. Stir in white chocolate and (optional) macadamia nuts with a wooden spoon.
Cover and chill for 1 hour
Drop dough by 2 tablespoonful per cookie. space 3 inches apart onto lightly greased cookie sheets, this recipe makes a big white chocolate chunk cookie. Bake at 350 F for 12 to 14 minutes (cookies will be soft).
Cool slightly on cookie sheets; remove to wire racks to cool completely.
This recipe makes about 1 1/2 dozen, double ingredients for 3 dozen.
